Sirius - Icelandic 56% Chocolate

A 200 g bar of 56% dark chocolate: rich in cocoa but still smooth and slightly sweet, so it pleases both the milk-chocolate crowd and the dark-chocolate purists. It snaps cleanly, melts evenly, and finishes without the bitterness of the 70%. Good on its own; very good melted.

The Síríus bar has been on Icelandic shelves since 1933, when Nói first sold it as baking chocolate, and this bittersweet strength is the one many Icelandic home bakers keep in the cupboard. Made by Nói Síríus in Reykjavík, chocolate makers since 1920.
